Herb Bread Machine Recipe With Cottage Cheese And Garlic
Excellent for ham sandwiches or with cheese and salad, this herb bread machine recipe will fill the kitchen with delicious smells and I challenge anyone who is hungry to let this one get properly cool before cutting it.
I bake this loaf on the ‘rapid’ bake setting which in my Panasonic is 2 hours, though it works just as well on the normal full 4 hour cycle.
Adding cottage cheese also adds liquid to the mix and as I’m sure you’ve discovered, quantities of ingredients are important in baking bread.
Just follow the recipe below and if you think the mix is a little too wet when the machine is kneading, then carefully sprinkle another teaspoon or two over the dough to correct it.
I’ve chosen mixed herbs which came from our own kitchen garden and were carefully dried in a dehydrator before storing – add in what you have and what you like, keeping in mind that some herbs like rosemary are more pungent than others – again, adjust the quantities to a common sense level unless you like a strongly flavored loaf.
You can add wholemeal flour to the mix if you like, but I would warn against making this loaf 100% wholemeal – it doesn’t seem to work as well with the bread overpowering the herbs – up to 50% wholemeal is fine and will still taste wonderful, plus you can still get away with a rapid bake cycle.
Storing fresh bread is the subject of a post here – there are several ways you can keep it fresh for a day or two longer, but whatever you do, don’t put it in a plastic bag, it will go horribly soft.

With the addition of cottage cheese to lighten and soften the bread, this herb bread machine recipe is one of the best I’ve tried and it will turn you out a loaf with a strong aroma but very gentle flavour, bringing all the warmth and satisfaction of late summer sun onto your palate.
Prep Time:5 minutes
Cook time:2 hours fast bake cycle, 4 hours normal bread cycle
Yield: 1 large loaf
– 1 ½ teaspoons yeast
– 1lb 4oz bread flour
– 2 teaspoons sugar
– 1 ½ teaspoons salt
– 1 oz butter
– 10 – 12 fl oz warm water
– 1 x 8 oz pot of cottage cheese – strained of liquid or reduce above by 2 fl oz
– 1 – 2 teaspoons of dried herbs
– 2 medium cloves of peeled and crushed garlicInstructions:
Load the following ingredients into the bread machine in the order your manufactures book tells you too, but basically separate the yeast away from the salt, sugar and water by using the flour.
1 teaspoons yeast
14oz bread flour
1 teaspoons sugar
1 teaspoons salt
½ oz butter
8 – 10 fl oz warm water
1 x 8 oz pot of cottage cheese – strained of liquid or reduce above by 2 fl oz
1 – 2 teaspoons of dried herbs
1 medium clove of peeled and crushed garlic
