  2. The batter tastes great with or without baking powder – we think it would also hold up well when made dairy-free by substituting 150ml light & mild olive oil instead of 200g butter (though our testers found themselves wanting more!).
  3. The cake is best enjoyed on the day it’s made, but you can store it in an airtight container for up to 5-6 days. If you’re looking for a dairy-free option that tastes just as good with olive oil instead of butter or cheese substitute 150ml light and mild olive oils (or more!)per 1 pound / 450 g total weight flour used – works out at about 3 tablespoons per slice!
  4. FREEZE: To save time, you may wish to freeze your freshly made cake once it has cooled. Place the lining paper with frosting on top and cover in foil before placing into an airtight container for up to 1 month! Defrost at room temperature 3-4 hours depending upon how big of servings will be eaten from this layer  or just have some leftovers that were not consumed during the cooking process?
